BLACKBERRY AND BAY LEAF JAM

Ingredients

1.5 kg fresh blackberries

1 kg sugar

1 lemon zest

4 tsp lemon juice

Pinch of salt

2 dried bay leaves

METHOD

1-  Begin by washing your blackberries in our colander from the Falcon 6 pieces Prep set.

2- Stir together berries, sugar, lemon zest and juice, salt, and bay leaves in a large and heavy saucepan. Bring all to a boil, stir until the sugar has dissolved and lightly mash the blackberries.

3-  Low the heat and simmer for 15 minutes until the fruit should be soft. Remove the saucepan from the heat.

4-  Press about half of the jam through a medium sieve and then return the strained jam to the saucepan.

5-  Return to a boil for another couple of minutes and remove the bay leaves.

5-  Spoon hot jam into hot sterilized jars, and cover immediately with sterilized lids.

Enjoy your home-made jam on warm toast served on Falcon plates.
