To kickstart the first weekend of the year we wanted to share this delicious recipe from the team at 1 Carnet 2 Notes for a new kind of roast for your Sunday setup… Roast cod with Chanterelles and Nori algae. Check out how they’ve used the coal black Falcon prep set and bake pan too.

Ingredients 

- 2 beautiful long cod fillets

- 1 jar of mushrooms

- 2 sheets of nori

- 1 shallot

- teriyaki sauce (sweet soy)

- olive oil / salt / pepper

- Kitchen string

- baking paper

Method 

Start by marinating the fish in olive oil and teriyaki sauce. Preheat the oven to 230 ° C. Meanwhile drain the chanterelles. Cook them in a frying pan with shallots for about 5 minutes.

Spread a filet of cod on a sheet of cooking paper (larger than 5-6cm on each side) cover with the mushrooms and the second fillet.Surrounded by nori algae and string. Brush the seaweed with olive oil and sweet soy sauce. Fold the papillote in the shape of a gift paper and tie it up to make sure it fits well. Bake for 15 minutes.

In accompaniment we made a pan of broccoli and hazelnut sprouts.
