EASY VEGAN LENTIL SOUP

We’ve pulled out some recipes from the archive for you to enjoy over the coming weeks that are simple, easy and good for the soul. This is a particular favourite of ours, as it only takes 30 minutes to prep and cook, uses mainly store-cupboard ingredients and is ideal for batch cooking.


EASY VEGAN LENTIL SOUP

PREPERATION TIME:

SERVES: 6


•​​ 10 1/2 cups water + vegetable stock cube
•​​ 4 cloves garlic minced
•​​ 1 white onion, diced
•​​ 8 carrots, thinly sliced
•​​ 5 red potatoes, chopped into small cubes
•​​ 2 cups uncooked brown lentils, rinsed and drained
•​​ handful of spinach (optional)
•​​ 1 teaspoon Himalayan salt
•​​ 1 teaspoon ground cumin
•​​ 1 teaspoon turmeric
•​​ 1/2 teaspoon ground black pepper
•​​ 1/4 teaspoon rosemary
•​​ 1/8 teaspoon thyme

Add the minced garlic and diced onions to a large pot with 1/2 cup of water and cook until semi-translucent.

Add 10 cups of water, vegetable stock cube, as well as all remaining ingredients (including the lentils) into the pot and bring to boil.

Turn down and simmer for 20 minutes (or until potatoes, lentils, and carrots are cooked through).
