AN AUTUMN AFTERNOON ACTIVITY

‘Oh Autumn how I love you. Especially with these Mushroom and Squirrel sugar cookies in the house, albeit not long! The perfect autumn afternoon activity plus my girls were over the moon excited to do this, they were so much fun to make. We laughed so much when we had to eat the poor little squirrels- but of course we gave them each a name- Mr. Tail-so-broken, Mrs. Kangaroo, Mr. Nuts, and Mrs. Brown. If you’d like to give them a try, here is my recipe’


MUSHROOM AND SQUIRREL SUGAR COOKIES

PREP TIME: 10 mins
COOK TIME: 10 mins


INGREDIENTS

•​​ 1 cup butter
•​​ 2 ounces cream cheese
•​​ 1 cup sugar
•​​ 1 large egg
•​​ 1 tsp vanilla extract
•​​ 1 tsp lemon zest (don't skip this- it makes them delicious)
•​​ 3 cups flour
•​​ 1.5 tsp baking powder
•​​ 0.5 tsp salt

FROSTING

•​​ 1 cup icing sugar



Mix all the ingredients together and flatten out between 2 sheets of parchment paper and chill for a bit

Then cut out your shapes and bake for 8-12 min (ovens vary!) at approx 175C

For the frosting, add tsp by tsp till you get the consistency you want.

Then split up into bowls and add your choice of food colouring.

Tip: If you don't have a cookie cutter, as with the bigger mushrooms here, I cut out some clean cardboard and used that as my guide and cut around it. My girl could easily do it, too.
